How to preparate Chifrijo like a costarican chelf

Chifrijo is a very popular dish in Costa Rica. As its name suggests in Spanish, Chifrijo contains pork rinds and beans, as well as rice, “pico de gallo” (a tomato-based salsa) and usually avocado. It has been consumed since the 90’s and is easy to find in every bar in the country.

You’ll find it’s really delicious if you dare to try. Here is the recipe so you can prepare it and become more familiar with Costa Rican culture.

Ingredients

  • 300g Beans (Red or “Cubaces”—large beans)
  • 300g Rice
  • 250g Chopped Pork Rinds
  • Cooking Oil
  • Salt
  • Pepper
  • Beef Consommé
  • Onion
  • Garlic
  • Bell or Sweet Pepper
  • Cilantro (Coriander)
  • Lemon juice
  • Tomato
  • Avocado
  • Toasted Tortillas

How to prepare Chrifrijo:

Beans: In a pot, take a spoonful of oil and fry the onion, garlic, sweet pepper, and cilantro, all finely chopped. Then add the 300g of beans and enough water to cover everything. Add beef consommé, a little pepper and salt. Cover it and let it boil for about 1 hour (or 30 minutes if you have a pressure cooker).

Rice: Fry sweet pepper, onion and garlic in oil. In a rice cooker, add two cups of water for every cup of rice, and then simmer as you normally would.

Pico de Gallo: Dice the tomato and finely chop cilantro, sweet pepper, and onion. Then add a pinch of salt and lime juice and stir.

Serving your Chifrijo

Chifrijo is eaten in soup bowls. First, serve rice, then add beans with some broth, followed by the diced pork rinds. You can add avocado if you’d like, and finally, add a layer of Pico de Gallo to top. Don´t forget to accompany it with toasted tortillas.
