Sancocho
Sancocho represents one of the most traditional Panamanian dishes. It is a soup made with chicken thighs mixed with yams, otoe (similar to potatoes in taste), and other vegetables, and seasoned with parsley, cilantro, garlic, and onion. If you visit Panama during carnival, chances are you will be able to find it everywhere.
Ropa Vieja
Do not be fooled by the name! This dish is made from shredded beef, specifically skirt. Its exquisite taste comes from being cooked in a sauce of tomato, onion, and cilantro.
